To do this, cut your chicken into small cubes of 3 cm in diameter, shred your mushrooms and finely chop an onion. Then sear the chicken in a pan with olive oil, add the onion and mushrooms. Remove the chicken, then add the pasta and white wine. Moisten everything with the poultry broth and continue cooking until there is no liquid left in the pan. At the end of cooking, add the poultry, parsley, cream and Parmesan. Finish the preparation with a drizzle of white truffle oil.

Once the peas are puréed, add your cheese and egg yolks. Finally, add your whipped egg whites and heat everything for 30-35 minutes in a hot oven while monitoring the cooking.
